These no bake Peanut Butter Coconut Bars are a dream come true for a healthy snack/nibble lover like me. And when you make this recipe you might as well make double because they rarely last very long in the fridge or freezer. They are made with mostly natural and healthy ingredients that are easy to find and usually already in stock in a lot of homes. These super food peanut butter coconut bars are great in between meals, breakfast or lunch. Enjoy!
Recipe Notes:
Instead of using peanut butter you could use almond butter or any nut butter.
Instead of using coconut flakes you could use shredded coconut.
Instead of using 70% chocolate you could use semi sweet chocolate.
Instead of using dried pomegranate seeds you could use dried berries or other dried fruit.

Peanut Butter Coconut Bars that are made with healthy ingredients like natural peanut butter, coconut oil, chia seeds, coconut flakes and dried cranberries. Yum!

Ingredients
- 125 gr natural peanut butter
- 2 tbsp coconut oil
- 115 gr honey
- 1 tsp vanilla extract
- 100 gr oats
- 2 tbsp chia seeds
- 15 gr coconut flakes (or shredded coconut)
- 25 gr dried cranberries (or dried berries)
- 25 gr 70% chocolate (melted)
- Sea salt
Instructions
- Heat peanut butter, coconut oil, honey and vanilla extract in a microwave for 1 ½ min until melted. Stir every 30 seconds.
- Transfer to a medium large bowl.
- Stir in oats, chia seeds, coconut flakes and dried cranberries. Stir until combined.
- Place in a paper lined bread pan.
- Melt the chocolate in a microwave and drizzle over the bars.
- Sprinkle with sea salt.
- Place in the freezer for 30 minutes before removing from pan and cutting into 10 bars or 8 squares.
- Store in an airtight container in the freezer or fridge.
