Peanut Butter Bars

Crunchy and chewy Peanut Butter Bars that taste great and are easy to make. I prefer to keep mine in the freezer that helps to keep them firm and they can be enjoyed straight from the freezer as a healthier snack at any time of the day. Peanut butter bedtime snack anyone? I topped them with sugar free 70% chocolate but you could also use regular 70% chocolate instead or dark chocolate. I hope you enjoy these peanut butter bars. Recipe Notes:

You could try sprinkling sea salt or chopped peanuts on top of the bars when adding the chocolate.

Peanut Butter Bars

No bake, easy Peanut Butter Bars that make a perfect healthier snack. Makes 10 bars.

Ingredients

Scale
  • 250 gr peanut butter
  • not the natural type, I use Sun-Pat
  • 85 gr honey
  • 1 tbsp coconut oil (melted)
  • 1 tsp vanilla extract
  • 125 gr flaxseed meal
  • 100 gr 70% chocolate
  • I used sugar free chocolate

Instructions

  1. In a medium large bowl mix together peanut butter, honey, coconut oil and vanilla extract.
  2. Add in flaxseed meal with a spoon and then use your hands. The batter will be thick.
  3. Line a bread pan with parchment paper and press the batter into the pan.
  4. Melt the chocolate and pour over the batter.
  5. Freeze for 30 min – 1 hour.
  6. Take out of the freezer and cut into bars.
  7. Put the bars in an airtight container and store in the freezer until ready to eat.
