Crunchy and chewy Peanut Butter Bars that taste great and are easy to make. I prefer to keep mine in the freezer that helps to keep them firm and they can be enjoyed straight from the freezer as a healthier snack at any time of the day. Peanut butter bedtime snack anyone? I topped them with sugar free 70% chocolate but you could also use regular 70% chocolate instead or dark chocolate. I hope you enjoy these peanut butter bars. Recipe Notes:
You could try sprinkling sea salt or chopped peanuts on top of the bars when adding the chocolate.

Peanut Butter Bars
No bake, easy Peanut Butter Bars that make a perfect healthier snack. Makes 10 bars.

Ingredients
- 250 gr peanut butter
- not the natural type, I use Sun-Pat
- 85 gr honey
- 1 tbsp coconut oil (melted)
- 1 tsp vanilla extract
- 125 gr flaxseed meal
- 100 gr 70% chocolate
- I used sugar free chocolate
Instructions
- In a medium large bowl mix together peanut butter, honey, coconut oil and vanilla extract.
- Add in flaxseed meal with a spoon and then use your hands. The batter will be thick.
- Line a bread pan with parchment paper and press the batter into the pan.
- Melt the chocolate and pour over the batter.
- Freeze for 30 min – 1 hour.
- Take out of the freezer and cut into bars.
- Put the bars in an airtight container and store in the freezer until ready to eat.
