This One Pan Easy Ravioli Pasta Bake is the perfect simple but delicious dinner ready in 35 minutes. With onions, spinach (or any other vegetables) and fresh ravioli in a creamy tomato sauce. It is all prepared and baked in one pan until pasta is cooked, then topped with freshly grated parmesan cheese until melted.
1 tbsp olive oil
1 large onion, sliced
1 garlic clove, minced
75 gr / 2.5 oz baby spinach
500 gr / 17.6 oz tomato passata
2 tbsps mascarpone, optional
Fine sea salt, pepper
250 gr / 9 oz fresh ravioli of choice
45 gr / ½ cup grated Parmesan
Fresh basil, chopped
Preheat oven to 190C / 375F
Heat the oil in a medium/large skillet over medium high heat.
Add the onion and cook until soft. About 5 minutes.
Add the minced garlic and cook until fragrant. About 1 minute.
Stir in baby spinach until wilted. Then stir in the passata and mascarpone until combined. Season with salt and pepper.
Remove from heat and stir in the ravioli until coated in the sauce.
Bake for 20 minutes in the oven. I like to stir it a little about halfway through. Top with grated Parmesan cheese and return to the oven for 5 minutes more or until the cheese has melted.
Serve right away and garnish with freshly chopped basil.
