Notes & Substitutions
Onion – I used a yellow onion in this recipe but you can use any type of onion you want.
Spinach – Instead of spinach you could try using kale.
Vegetables – This recipe is very customizable so instead of using an onion and spinach, feel free to use any vegetables of your choosing.
Mascarpone – Instead of mascarpone you can use cream cheese or sour cream. Just stir it together with the tomato sauce until everything is melted and combined.
Ravioli – I used cheese filled ravioli in this recipe which I think goes perfectly. But you can use any type of ravioli OR tortellini.
Parmesan – Instead of parmesan you can use grated grana padano or pecorino.
Fresh Basil – Instead of fresh basil you can use fresh parsley.
