This family friendly Mediterranean Pasta Salad is the perfect simple and easy end of summer dish. It’s extremely fresh and the only cooking required is boiling the pasta and then some chopping of vegetables and your done. Mix everything together in one bowl and serve this mediterranean pasta salad either on its own or as a side salad.
It can be served in so many different ways and no matter how you serve it, it’s definitely going to be a crowd pleaser. Some of my favorite ways to serve it include:
-Appetizer (Makes a perfect fresh appetizer before dinner)
-Side salad (The perfect side salad with your dinner)
-Dinner (Hello, ready to eat in 30 minutes dinner)
-Lunch (Hello, leftovers from last night’s dinner)
-Breakfast (Why not? Try it for breakfast with an fried egg, I love it!)
Feta Cheese Tip
I buy cubed feta cheese marinated in oil with herb seasoning. (I drain the oil from it before adding it to the salad) But you can also buy a block of feta cheese and crumble it.
Dressing Tip
I keep the oil dressing simple but you can add more seasoning to it for example:
-Dried basil
-Dried parsley
-Garlic powder
-Onion powder
-Italian seasoning
-Red pepper flakes
Serving Suggestion
Try serving this salad with an fried egg with the yolk still runny. Let me tell you, it is DELICIOUS! If you’re a fan of runny yolk that is.

Ingredients
250 gr / 8 oz pasta of choice
A handful of lettuce leaves, washed
200 gr / 7 oz cherry or grape tomatoes, halved
½ red onion, thinly sliced
½ cucumber, thinly sliced
½ red bell pepper, sliced
60 gr / ½ cup pitted olives, green or black
60 gr / ½ cup cubed feta cheese, or crumbled
Salt and pepper to taste
Simple Lemon Oregano Dressing
60 gr / ¼ cup extra virgin olive oil
1 tbsp lemon juice
1 tsp dried oregano
Instructions
For the dressing:
Mix all of the ingredients together in a small bowl until combined.
For the pasta:
Cook the pasta according to package instructions.
Drain the pasta and rinse in cold water.
Tear or cut the lettuce leaves into bite sized pieces.
Add the pasta to a large bowl.
Add in all of the remaining ingredients and mix together with the cooked pasta. Season with salt and pepper.
Drizzle the dressing over and toss until everything is well combined.
Notes
Try adding avocados to this salad.
You can also serve this salad with your favorite dressing. Any type of dressing works.
