Homemade Breakfast Granola Bars

These no bake Homemade Breakfast Granola Bars make the perfect breakfast or snack for the entire family. They are highly customizable and very easy to make. Feel free to use your favorite nuts, seeds, dried fruits or other delicious add ins. I hope you enjoy.

How To Make These Homemade Breakfast Granola Bars?

I always start by gathering all of the ingredients needed in a recipe and weighing and measuring everything before I start to cook or bake. This part is really important and key in keeping everything organized.

To make these homemade breakfast granola bars you start by lining a square baking pan (8×8 or 9×9) with parchment paper and spray it with nonstick spray.

In a microwave safe bowl or a small saucepan over medium heat, combine the maple syrup, nut butter and coconut oil. Melt and stir until smooth and combined. Remove from the heat and stir in vanilla extract. Let cool down for 3-5 minutes.

Combine oats, cinnamon and salt in a large mixing bowl. Then stir in chopped almonds, cranberries and raisins. Stir in the nut butter mixture until evenly combined.

Transfer the mixture into the prepared baking pan pressing firmly down with a spatula or a spoon into an even layer and place the bars in the refrigerator for at least 2 hours to set. Once chilled, remove from the pan onto a cutting board and slice into bars or squares.

Serve and enjoy!

How To Store These Homemade Breakfast Granola Bars?

Store in the refrigerator in an airtight container for up to 1 week. Or in the freezer for up to 2 months.

Notes + Substitutions

It’s very important to chill these bars for at least 2 hours. That helps them to firm up so that it makes it easier to cut them into bars and serving. I always store them in the refrigerator and serve them chilled. They make the perfect snack for grabbing quick breakfast in the mornings.

Maple Syrup – I prefer to use maple syrup as the sweetener in this recipe because I think it gives it the perfect not too sticky texture. But instead of maple syrup you can also use honey or agave nectar. I have tried making these with honey and they turned out good but slightly stickier mixture than when using maple syrup.

Nut Butter – In this recipe I use almond butter because I think it pairs perfectly with the roughly chopped whole almonds I use as well. But instead of almond butter you can use any nut butter of your choice. Peanut butter would go perfect.

Coconut Oil – Melted butter can be used instead of coconut oil.

Ground Cinnamon – You can skip cinnamon if you don’t like it but I highly recommend using it. I think it gives the granola bars that extra deliciousness because of how well it goes together with the nutty flavor of chopped almonds and sweet fruity flavor of dried raisins and cranberries.

Almonds – I roughly chop whole almonds to give the bars a little extra crunch. You can also use any other type of nuts and or seeds.

Cranberries + Raisins – I use dried cranberries and raisins in this recipe but if you don’t like either one of them you can double the amount of the other one. Or replace them both for something else of your choice.

Endless Possibilities

This recipe is very customizable and like mentioned above has endless possibilities to what you can use in it. I chose my favorite granola add ins and I recommend you do the same!

Use your favorite sweetener.

Use your favorite nut butter.

Use your favorite flavored extract.

Use your favorite nuts (and or seeds).
Whether they are whole nuts, chopped nuts or flakes, anything works. For example: Almonds, brazil nuts, cashews, hazelnuts, peanuts, pecans, pine nuts, pistachios, pumpkin seeds, sunflower seeds, walnuts, chia seeds, sesame seeds.

And, use your favorite dried fruit (including freeze dried).
For example: Goji berries, apricots, dates, cherries, apples, pineapple, coconut flakes, shredded coconut, bananas, peaches, cranberries, raisins, figs, strawberries and raspberries.

If you want your granola bars a little sweeter you can also add chocolate to the mix. Add any type of chocolate chips or chopped chocolate.

113 gr / 1/3 cup pure maple syrup    
80 gr / 1/3 cup nut butter of choice        
2 tbsp coconut oil
1 tsp vanilla extract
180 gr / 2 cups old fashioned oats
¼ tsp ground cinnamon
½ tsp fine sea salt
75 gr / ½ cup roughly chopped almonds
30 gr / ¼ cup dried cranberries
30 gr / ¼ cup dried raisins

Instructions
