Healthy Garlic Mushroom Soup

This Healthy Garlic Mushroom Soup is both easy and delicious. It’s made from scratch using simple ingredients such as onion, garlic, mushrooms, thyme, vegetable broth and coconut yogurt which results in a soup that is both healthy and FULL of flavor.

How To Make This Healthy Garlic Mushroom Soup?

I always start by gathering all of the ingredients needed in a recipe and weighing and measuring everything before I start to cook or bake. This part is really important and key in keeping everything organized.

To make this Healthy Garlic Mushroom Soup you start by heating olive oil and onion in a stockpot or Dutch oven and cooking until soft. You add the garlic and cook until fragrant about 1 minute.


Add the chopped mushrooms and dried thyme. Cook for 10 minutes until the mushrooms are soft and starting to brown. Then you add the broth and bring to a boil.

Reduce the heat and leave to simmer for about 20 minutes.

Stir in the coconut yogurt and blend the soup using an immersion blender or by transferring it to a high speed blender and blending until smooth. Adjust seasoning with salt and pepper.

Serve right away with extra yogurt and fresh thyme.

How To Store This Healthy Garlic Mushroom Soup?

Store any leftovers of the soup in an airtight container in the refrigerator for up to 3-4 days.

Recipe Notes:

Mushrooms – Any type of mushrooms work well in this recipe. You can also use a mix of mushrooms or wild mushrooms.

Coconut Yogurt – In this recipe I use dairy free coconut yogurt but you can use any type of plain yogurt in this recipe both dairy and dairy free. You can also use coconut cream or cream of full fat coconut milk.

Ingredients

1 tbsp olive oil
1 large onion, finely chopped
2 garlic cloves, minced
750 gr / 1.6 pound Mushrooms, roughly chopped
(chestnut or white button)
1 tbsp dried thyme
960 ml / 4 cups vegetable broth or chicken
2 tbsp plain dairy free coconut yogurt
Salt and pepper, to taste

Fresh thyme, for garnish

Instructions

In a stockpot or dutch oven over medium high heat, add olive oil and onion and cook until soft. About 5 minutes.

Add the garlic and cook until fragrant. 1-2 minutes.

Add the chopped mushrooms and thyme. Cook for 10 minutes until the mushrooms are soft and starting to brown.

Add vegetable stock and bring to a boil.

Reduce the heat and leave to simmer for about 20 minutes.

Stir in the coconut yogurt and blend the soup using an immersion blender or by transferring it to a high speed blender and blending until it has reached your desired consistency.

Adjust seasoning with salt and pepper.

Serve right away with extra yogurt and fresh thyme.
