This super fresh Easy Watermelon Cucumber Salad is made with cubed watermelon and cucumber in an easy lime dressing that is then served with fresh herbs and crumbed feta cheese. It makes the perfect summer side dish or addition to any party. I hope you enjoy!

How To Make This Easy Watermelon Cucumber Salad?

I always start by gathering all of the ingredients needed in a recipe and weighing and measuring everything before I start to cook or bake. This part is really important and key in keeping everything organized.


To make this easy watermelon cucumber salad you start by making the dressing by whisking together lime juice and zest, extra virgin olive oil and salt in a small bowl. Set aside.

Then you combine the cubed watermelon, cucumber, fresh basil and cilantro in a large bowl. Pour in the dressing and gently toss everything together until combined.

Serve by arranging the salad on a large plate or bowl and top with crumbled feta cheese. Garnish with more fresh herbs.

How To Store This Easy Watermelon Cucumber Salad?

This salad is the freshest served same day but also delicious the day after. Store any leftovers of this salad wrapped with plastic wrap or in an airtight container in the refrigerator for up to 2 days.

Notes & Substitutions

Limes: Instead of limes in this recipe, you can use lemon juice and zest.

Extra Virgin Olive Oil: You can use any type of oil you want or have in this recipe.

Fresh Herbs: I use basil and cilantro but feel free to use any fresh herbs you want. For example, you could try using mint!

Feta Cheese: If you don’t like feta cheese, skip it or substitute it with another cheese.

Ingredients

2 limes, juice and zest
2 tablespoons extra virgin olive oil
¼ teaspoon fine salt
½ watermelon, cut into cubes
1 cucumber, cubed
3-4 tablespoons fresh basil, sliced
3-4 tablespoons fresh cilantro, chopped
50 gr / 1/3 cup feta cheese, crumbled

Instructions

Make the dressing by whisking together lime juice and zest, extra virgin olive oil and salt in a small bowl. Set aside.

In a large bowl, combine the cubed watermelon, cucumber, fresh basil and cilantro.

Pour in the dressing and gently toss everything together until combined.
