This Easy Healthy Seed Bread is gluten free, sugar free and keto friendly. It makes the perfect easy healthy snack to grab for breakfast, middle of the day or pre and post workout snack. P.S it’s extra delicious with an egg salad on top!
130 gr / 1 cup sunflower seeds
75 gr / ½ cup pumpkin seeds
70 gr / ½ cup sesame seeds
40 gr / ¼ cup chia seeds
35 gr / ¼ cup flaxseed
35 gr / ¼ cup psyllium husk powder
1 tsp sea salt
5 large eggs
3 tbsp olive oil
45 gr / ½ cup grated Parmesan cheese (optional)
Preheat the oven to 180 C / 355 F.
Line a standard sized loaf pan with parchment paper.
Combine all of the dry ingredients together in a large mixing bowl.
Stir in the eggs, olive oil and grated Parmesan until fully combined.
Transfer the mixture into the prepared loaf pan and use your hands or a spatula to evenly press it into the pan.
Bake for 40-45 minutes.
Once baked, remove from the oven and let sit and cool down for about 3-5 minutes.
Remove the loaf from the pan and let cool down completely on a cooling rack before slicing into slices and serving.
Store in an airtight container in the fridge for up to 1 week.
