Easy Breakfast Salad

This Easy Breakfast Salad is the perfect way to start your day with this easy meal full of delicious flavor and nutrition. You won’t regret making this easy breakfast salad your next thing to try for breakfast or lunch. So, go ahead and dip those healthy greens and fried bacon into that creamy runny egg yolk deliciousness.

This quick and easy recipe is to give you the idea of a salad for breakfast and how egg and bacon are perfect when paired with whatever greens you have on hand.

Bacon Note:


If you don’t like bacon you can substitute it with any other meat you prefer. For example: ham, sausages, leftover chicken, turkey etc. OR simply just skip the meat.

You Can ADD:

Roasted vegetables! Roasted seasonal vegetables make a great substitution for the bacon or as an addition to the salad. For example: Sweet potatoes, potatoes, butternut squash, zucchini, cauliflower, broccoli and brussels sprouts.

Egg Note:

My preferred way is sunny side up and the reason for it is so I can use the runny egg yolk as sauce/dip for the salad. But, you can serve the eggs ANY way you like. If you want scrambled, then do scrambled. If you want poached, do poached. Eggs are always delicious no matter how they are served.

Another idea for the eggs is hard boil/soft boil them and cut into quarters.

Greens Note:

For this recipe, I used a combination of baby spinach and kale but you can use any type of greens you have at hand or your favorite type. You can also use only kale or only spinach.

Another idea for greens is adding microgreens or fragrant fresh herbs. For example: Cilantro, parsley or dill. Both would it decorate the dish and add flavor.

Healthy and easy breakfast salad packed with delicious flavor and nutrition. Wilted greens, crispy bacon and sunny side up eggs with runny yolk!

Ingredients

Scale

1 tbsp vegetable oil
¼ red onion, sliced
50 gr / 1 ½ cup baby spinach
50 gr / 1 ½ cup kale
3 slices bacon
2 eggs
Salt, pepper

Instructions

Heat oil in a large skillet over medium high heat.

Add red onion and cook until soft. About 5 minutes. Add greens and toss to combine. Sprinkle with salt. Cook for 2-3 minutes until greens begin to wilt. Be careful not to overcook, you don’t want them too soft. Transfer to a salad bowl.

Fry the bacon to your desired crispiness. And then transfer to your bowl.

Fry the eggs in the bacon fat sunny side up. Or however you like your eggs.

Season eggs with salt and pepper and place on top of the greens.

Serve right away while still warm.

Notes

You can add fresh herbs to enhance the flavor.
