This Creamy Rotisserie Chicken Salad is made from store bought or homemade rotisserie chicken. I then add in some celery, red onion, avocado, corn and grapes. It’s then combined together with creamy mayo and sour cream. It’s perfect for sandwiches and wraps with some lettuce or rucola. I hope you enjoy!

I always start by gathering all of the ingredients needed in a recipe and weighing and measuring everything before I start to cook or bake. This part is really important and key in keeping everything organized.

To make this recipe you will need the following ingredients:

  • Cooked rotisserie chicken
  • Celery stalks
  • Red onion
  • Avocado
  • Canned corn
  • Red grapes
  • Mayonnaise
  • Sour cream (or yogurt)
  • Fresh lemon juice´
  •  Fine salt
  •  Ground pepper

You simply pull the meat off the bones of the rotisserie chicken and shred it into pieces. Then you mix all of the ingredients together in a large bowl and season with salt and pepper. Transfer to an airtight container and store in the refrigerator.

This chicken salad is the perfect lunch, snack or light dinner. Here are some serving suggestions:

-Serve it as a sandwich with lettuce, rucola or spinach on sandwich bread, baguette, ciabatta or sourdough bread.

-Serve it in a tortilla wrap.

-Serve it with crackers.

-Serve it as a side with other meals.

-Serve it as part of a buffet.

Notes & Substitutions

In this chicken salad I use a couple of my favorite ingredients that I think go great with chicken. However, this salad is extremely flexible so you can skip or substitute any of the ingredients you don’t have or like.

Cooked Chicken: Instead of cooked chicken you could use leftover turkey. Try my recipe for air fryer rotisserie chicken.

Sour Cream: I use sour cream and mayonnaise in this recipe but you can also use only mayonnaise, or mayonnaise and yogurt instead of the sour cream.

Lemon Juice: Lime juice works well instead of lemon juice.

Ingredients

1 cooked rotisserie chicken
(store bought or homemade)
23 celery stalks, chopped
½ red onion, finely chopped
1 large avocado, diced
165 gr / 1 cup canned corn, drained
200 gr / 2 cups red grapes, halved
115 gr / ½ cup mayonnaise
115 gr / ½ cup sour cream or yogurt
4 tablespoons fresh lemon juice
1 teaspoon fine salt
½ teaspoon ground pepper

Instructions

Pull the meat off the bones of the rotisserie chicken and shred into pieces.

Mix all of the ingredients together in a large mixing bowl.

Season with salt and pepper.

Store in the refrigerator in an airtight container.
