These easy Chocolate Peanut Butter Cookies without flour aren’t only quick to make but also extremely good. Peanut butter and chocolate is a combination that doesn’t disappoint. If however you want to skip the chocolate, that‘s alright too! They are also good without it. I hope you enjoy these wonderful chocolate peanut butter cookies.

Recipe Notes:

You can use brown sugar instead of coconut sugar.
You can also skip the chocolate chips OR add 75 gr of chopped nuts instead of chocolate chips.

Healthier Chocolate Peanut Butter Cookies that are made of ingredients like peanut butter, coconut sugar, oats and chocolate.

Ingredients

Scale
  • 2 eggs
  • 100 gr coconut sugar
  • 1 tsp vanilla extract
  • 250 gr natural peanut butter
  • 75 gr rolled oats
  • 1 tsp baking soda
  • 75 gr dark chocolate chips

Instructions

  1. Preheat the oven to 175°C. Line a baking sheet with parchment paper.
  2. In a large mixing bowl stir together eggs and coconut sugar.
  3. Stir in vanilla extract, peanut butter, oats and baking soda.
  4. Carefully fold the chocolate chips in with a spatula.
  5. Using a cookie scoop, scoop the cookie dough onto the prepared baking sheet.
  6. Flatten the top of the cookies a little with your hands.
  7. Bake in the middle of the oven for 9-10 minutes. Until the edges of the cookies are starting to turn golden brown.
  8. Let the cookies cool down on the baking sheet for 5 minutes before moving onto a wire rack to cool completely.
  9. Store the cookies in an airtight container at room temperature for 3 days or longer in the freezer.
