These easy Chocolate Peanut Butter Cookies without flour aren’t only quick to make but also extremely good. Peanut butter and chocolate is a combination that doesn’t disappoint. If however you want to skip the chocolate, that‘s alright too! They are also good without it. I hope you enjoy these wonderful chocolate peanut butter cookies.
Recipe Notes:
You can use brown sugar instead of coconut sugar.
You can also skip the chocolate chips OR add 75 gr of chopped nuts instead of chocolate chips.

Ingredients
- 2 eggs
- 100 gr coconut sugar
- 1 tsp vanilla extract
- 250 gr natural peanut butter
- 75 gr rolled oats
- 1 tsp baking soda
- 75 gr dark chocolate chips
Instructions
- Preheat the oven to 175°C. Line a baking sheet with parchment paper.
- In a large mixing bowl stir together eggs and coconut sugar.
- Stir in vanilla extract, peanut butter, oats and baking soda.
- Carefully fold the chocolate chips in with a spatula.
- Using a cookie scoop, scoop the cookie dough onto the prepared baking sheet.
- Flatten the top of the cookies a little with your hands.
- Bake in the middle of the oven for 9-10 minutes. Until the edges of the cookies are starting to turn golden brown.
- Let the cookies cool down on the baking sheet for 5 minutes before moving onto a wire rack to cool completely.
- Store the cookies in an airtight container at room temperature for 3 days or longer in the freezer.
