Easy make ahead Chicken Fajitas Breakfast Egg Muffins that make the perfect quick and hearty breakfast to grab on the go on busy mornings. They are packed with fluffy eggs, chicken, onions, bell pepper, fajita seasoning and cheddar cheese.
10 large eggs, beaten
100 gr / 3.5 oz cooked chicken, diced
½ medium onion, finely chopped
½ red bell pepper, diced
½ green bell pepper, diced
½ teaspoon paprika
½ teaspoon garlic powder
¼ teaspoon chili powder
¼ teaspoon ground cumin
½ teaspoon fine salt
¼ teaspoon black pepper
100 gr / 3.5 oz grated cheddar
Preheat oven to 190C / 375F.
Position your oven rack in the center of the oven and grease 2x standard 12 cup muffin pans. This recipe yields 18 muffins.
Lightly beat the eggs in a large bowl and then add in all of the remaining ingredients until combined.
Pour or scoop the mixture into the muffin cups filling them about 3/4.
Bake for 14-15 minutes or until set and the top is lightly golden brown. It should also spring back when you touch it.
Run a knife along the sides of the muffins to remove from the pan.
