I‘m super excited about these easy Breakfast Cookies because I love quick but yet delicious recipes. They are made out of healthy ingredients such as mashed bananas, oats, almond butter, chopped nuts, maple syrup, raisins and dried cranberries and they are perfect on the go as a breakfast or snack. These breakfast cookies can easily be changed into your own because this recipe is so adjustable. I hope you enjoy and have fun with these cookies!
How To Make These Breakfast Cookies?
I always start by gathering all of the ingredients needed in a recipe and weighing and measuring everything before I start to cook or bake. This part is really important and key in keeping everything organized.
To make these Breakfast Cookies you start by lining a baking sheet with parchment paper.
Then you mix all of the ingredients together until combined in a large bowl.
Then you scoop the cookies onto the prepared baking sheet with a medium sized cookie scoop. And gently press down on the surface of the cookies.
Then you bake them for 17-20 minutes until sides are golden brown.
Take out of the oven and let cool down for 5 minutes before removing from the sheet.
How To Store These Breakfast Cookies?
Store these Breakfast Cookies in an airtight container or a Ziploc bag for up to 5 days at room temperature.
Recipe Notes:
I used almond butter for this recipe but you can also use peanut butter or any other type of nut butter.
I used a mix of chopped almonds and pecans but you can also skip them if you don’t like nuts or replace them with any other type of nuts. Walnuts, pine nuts, cashews, hazelnuts or brazil nuts are all great options. Chop into small bite size pieces.
Same goes for the dried fruit. I used a raisins and dried cranberries but any other dried fruit would go well in this recipe. Here are some ideas: Apricots, dates or dried apples.

Ingredients
2 bananas, mashed
200 gr / 2 cups rolled oats
240 gr / 1 cup almond butter
40 gr / ¼ cup whole almonds, chopped
40 gr / ¼ cup pecans, chopped
85 gr / ¼ cup maple syrup, or honey
1 tsp vanilla extract
¼ tsp ground cinnamon
¼ tsp fine sea salt
40 gr / ¼ cup raisins
40 gr / ¼ cup dried cranberries
Instructions
Preheat oven to 175C / 350F
Line a large baking sheet with parchment paper.
In a large bowl mix all of the ingredients above until combined.
Using a medium size cookie scoop, scoop the cookies onto the prepared baking sheet. The recipe makes about 12 cookies. Press gently down on the surface of the cookies with the back of the cookie scoop or a spoon. Make the cookies as thick or thin as you like because they won’t spread much in the oven.
Bake for 17-20 minutes. Or until the sides of the cookies start to get golden brown.
Take out of the oven and let the cookies cool for about 5 minutes on the baking sheet before removing.
Store the cookies in an airtight container or a zip loc bag for up to 5 days at room temperature.
