This 3 Ingredient Roasted Garlic Puree is the perfect healthy spread for fresh bread or crackers or for adding garlic flavor to dishes. It can also be used on sandwiches, burgers or as a dip.
4 whole heads of garlic
2 tablespoons olive oil
Fine salt
Preheat oven to 200C / 400F.
Cut the top of the garlic heads and place on a baking dish with the cut side up.
Drizzle the garlic with 1 tablespoon of the olive oil and sprinkle with salt.
Roast for about 35-40 minutes until the garlic is very soft. Careful of burning.
Remove from the oven and let it cool for 1-2 minutes. Then squeeze the garlic cloves out of their skins into a small bowl.
Add in the remaining olive oil and a pinch of salt.
Mash everything together with a fork until it forms a smooth paste.
Store in an airtight container or glass jar in the refrigerator for up to 1 week.
